サイズ: 細い種子鞘は長さが最大 10 インチまで成長しますが、食用に使用されるものは通常 4 ～ 6 インチ以下です。
色と外観: 小さな毛で覆われ、長さに沿って 5 つ以上のはっきりとした隆起があります。生の種子鞘は濃い緑色ですが、成熟するにつれてさらに濃くなります。赤オクラの品種は鮮やかなバーガンディ色ですが、調理すると緑色になります。
味と風味: 柔らかい生の鞘は心地よい甘味があり、滑らかでありながらやや歯ごたえのある食感が面白いです。オクラは調理すると濃厚で粘り気のある汁が出ますが、生の鞘を切るとかなり乾燥しています。
